When Covid-19 closed borders and the 1.4million visitors to the West Coast town of Kumara dried up, TJ and Paul Greaves thought their hospitality dream was over.

The couple had to close their popular fish and chip business Prospectors, a food caravan focusing on the classic Kiwi takeaways and 2021 2degrees Shop Local People’s Choice winner.

However hospitality runs in their veins and a summer cherry picking in Cromwell revived the dream and provided a fresh opportunity.

“We didn’t think we would find anywhere to start up again,” Mrs Greaves said.

When a suitable space opened up in the Cromwell Mall – in a town full of people and visitors – it was too good to turn down.

“We saw this space and said we’ll give that a revamp and let’s give that a go.”

Yesterday, six weeks after signing the lease followed by a swag of renovations and preparation, Prospectors Cromwell opened.

But it is not your standard fish and chip shop, Mr Greaves said.

The menu featured an array of “wild food” gourmet burgers – wallaby, paua, goat – as well as fish overnighted fresh off the boats in Greymouth.

A focus on sustainability was important and the bulk of the kitchen fare was made in-house, he said.

With the doors open the next focus was hiring more staff.

Prospectors Cromwell is open Wednesday – Sunday 11am-2pm, 4pm-8pm
